  • Leek and celeriac “Vichyssoise”, olive oil sorbet, fried herbs
  • Prawn ravioli in a light bisque, pea puree, gremolata
  • Warm asparagus, parmesan mousse, parmesan shortbread

Mains

  • Peppered 80 days grain fed sirloin, confit shallots, mousseline potatoes
  • Crispy duck confit a l’orange, crushed Jerusalem artichoke and pumpkin
  • Twice cooked pork belly and pork hock (like an Osso Bucco)

Dessert

  • Tiramisu with grated tonka bean
  • Goat milk panna cotta, poached pear and blueberries
  • Vanilla crème brûlée, chilled strawberry tea
